I think I did pretty much all of the gravel segments, save the four-miler that starts 24 miles in, on my road bike last year. I wasn't railing the descents, but they were doable. Would recommend 30 mm or close at least. Like you state it is possible to ride most these roads with normal road tires, caveats for winter.
