I save my skin suits for extra hard workouts where I need some motivation. Nothing worse than putting on a skin suit and going slow

Mtn stuff fits true to size with our road apparel. The jerseys are cut to fit a bit looser but most people stick with the same size. That said some mtb folks prefer a much baggier fit, if you've got riders with that preference they may want to size up.
