My guess is they're hoping the idea catches on with others.  

They can currently 'get away with it' because they sell the bike with their own cranks, minimizing other compatibility problems, because fast wheel changes aren't important in 'cross, because people will have two sets of their own wheels.

The concept is pretty cool, but 7k euros is a lot of scratch.  Even if it comes down in cost, the bulk of it negates a lot of potential buyers in urban dwellings where space is a huge factor.
