I strongly urge you to explore with Marc on Option 1. Riding through the wormhole is a good experience for everyone. Keeps people fresh and open and honest about their form. Option 2 is a great one, but I'd save it for days when it's at least warm enough not to wear booties--and you're fit enough to enjoy lots of climbing.

Happy to lead you through the wormhole on Option 1 or anywhere. The big thing is to try to ride steady hard double-paceline all the time, not dawdling on the flats and shredding the hills. Steady is good in the cold and good for building overall fitness.
